Tomato Sauce

This sauce is one of the traditional rustic recipes. A whole summer's sun is necessary to bring these oval shaped succulent tomatoes to a slow and complete maturity in their perfectly drained, sandy soil, lying on vast and deep layers of clay. Harvested and worked on between the end of August and the beginning of September, firm and tasty, they are the only component of this age old extraordinary sauce.

According to the classic home cooking recipe, they are rapidly cooked and passed through a vegetable mincer. The pulp and is natural juices are taken and put in jars. This simple, traditional method of cooking is the only key to preserving its delicious taste. Once sealed, the jars are sterilised in couldrons of boiling water.

These tomatoes are one of the most traditional rustic recipes of the Salento region. When one opens the jar one can experience the aroma of summer and the sunshine necessary to bring these succulent and firm tomatoes to a slow and perfect maturity. Once harvested, 

they are washed and bottled with aromatic basil leaves. A unique, traditional cooking method is the only key in preserving their delicious taste. Once the jars have been sealed, they are placed in 'cauldrons' of boiling water where the cooking and bain marie takes place. Now these cherry tomatoes are ready to be used in various sauces.


Sun Dried Tomatoes in Olive Oil

These tomatoes are one of the most traditional rustic recipes of Salento. The whole summer long is necessary to bring these firm and juicy tomatoes to a slow and perfect maturity. They are cut, seeded, placed on wooden planks and covered with immaculate gauze. The 

Salento sun then providentially takes care of them, by drying them. Every tomato is then flavoured with salt and a pinch of garlic, a mint leaf and paprika before being placed in jars and sprinkled with wine vinegar and olive oil. Once sealed, the jars are sterilised in couldrons of boiling water. This unique method of preserving is the only key to preserving their delicious taste. These tomatoes can be used in either hot or cold dishes. They are ideal for sauces and delicious on canapes, friselle (rusks), pizza, or focaccia or as an accompaniment to red and cold meats.
